The outer ring is 16 inches, and the inner ring is 8 1/2 inches. You can use the inner ring by itself for 16-inch pans and smaller. Total BTU output is 38,800. The burner fits well with the 18 inch pan, and can be used with paella pans as large as 24 inches. The burner offers maximum control and flexibility, supplying even heat under the entire paella pan. Each ring is controlled by its own knob, so you can adjust the heat where and when it’s needed. The burner fits into the tripod to keep it at a convenient level for cooking, about 30 inches high. The 18″ pan, which serves 6 to 8 people, is made of carbon steel, which is authentic, durable, and conducts heat quickly. The handles are made of steel and painted red. The pan is thin but quite rigid and durable, with a hammered dimpled bottom. Carbon steel is the traditional material for paella, and some paella devotees feel that it enhances flavor.
