Blood Orange Aperol Collins

A Tom Collins, which is traditionally made with gin, lemon, sugar, and soda water, is the perfect vehicle for the bright, bitter flavors of an amaro, like Aperol. Adding the Solerno gives the drink another dimension of flavor from the deep, sweet blood orange.

The sugar in the liqueur replaces the simple syrup that you would usually use in this drink. You can also vary the amount of Aperol (from 1/2 to 3/4 oz) depending on how bitter you like your cocktails.

Ingredients

  • 2 oz gin
  • 3/4 oz lemon juice
  • 1/2 oz Aperol
  • 1/2 oz Solerno
  • Club soda
  • Blood Orange optional

Instructions

  1. Combine gin, lemon juice, Solerno, and Aperol in a shaker with ice.
  2. Shake and strain into a collins glass with ice. Top with club soda.

Recipe Notes

Garnish with a fresh blood orange slice when they are in season.
