When the stock has finished fortifying, strain everything out and set the liquid aside. There should be approximately 2 cups of liquid remaining.
In a saucepan, make a roux by whisking the seasoned butter and flour together over medium heat. Once the roux has turned golden brown, slowly pour in the stock while whisking.

Reduce the heat to a low simmer and whisk occasionally until the gravy has reached its desired consistency. This usually takes 7 to 12 minutes.
The gravy will continue to thicken as it cools.
Notes
If you’re using regular or reduced sodium stock, leave the salt out until the gravy has started to thicken and if needed, add a ½ tsp of salt.For more bite, use a full teaspoon of half-sharp paprika or add a tsp of your favorite hot sauce.
