To make a smooth, flavorful turkey gravy, make a simple stock from the turkey neck and other giblets.

What are Giblets

Giblets consist of the neck, heart, gizzard, and liver in turkeys and chickens and are often found in a small bundle inside the bird’s cavity.

Stock vs. Drippings

Turkey gravy made with stock has the same flavors as one made with drippings without ever turning out too greasy or overly salty.  It can also be made ahead of time.

Making the Stock

Brown the turkey giblets and aromatics, add the seasonings and water. Simmer for 3 to 4 hours.

Making Turkey Gravy Exciting!

Make a roux, add in seasonings and stock.  For flavors that pop use smoked paprika, hot sauce, and fresh thyme. Continue whisking until the gravy thickens.
