Think that tequila and sparkling wine is a strange combination? Think again. This bubbly cocktail combines tequila, celery, herbs, and sparkling wine for a drink thatโ€™s perfect for bringing a little something extra to special occasions and the holidays.

Vegetal, green flavors might not be the first thing you think of when you imagine a sparkling wine cocktail, which usually veers toward the sweeter side. But the bright, fresh taste of tequila actually pairs beautifully with the earthy celery and the citrus notes that are often found in sparkling wine.

By muddling the celery with lemon juice, sugar, and thyme, you can extract its unique flavor without any of the stringy texture, and adding bubbles gives the whole drink a lovely lightness.

Ingredients

  • 1 rib celery, chopped
  • 1 tbsp sugar
  • 1 sprig thyme, stem removed
  • 2 oz tequila
  • Sparkling wine

Instructions

  • Combine sugar, lemon juice, celery, and thyme in a mixing glass and muddle.
  • Add tequila and ice. Shake and strain into a flute. Top with sparkling wine.
