Maple Toddy

- Start by reducing 8 cups of maple sap by 25 percent or so. The goal is to increase the sweetness and start bringing out the maple flavor.
- For each drink stir 1 1/2 cups of the warm maple sap with 1 oz of bourbon, 1 1/2 tsp of maple syrup, and a lemon slice.
- Serve steaming hot, preferably by a roaring fire.
