Growing up, sloppy joes were a regular dinner, especially in the winter. Theyโ€™re simple to make, taste great, and are one of the few dump and stir recipes I love to eat.

When I started working on this sloppy joe recipe, I wanted to take a different approach and figure out how to make sloppy joes healthier and better tasting – without complicating a dish that should be easy to make.ย 

What I found was that by replacing a few highly processed ingredients with whole foods, I could make the sloppy joes healthier and improve their flavor.

A Better Tasting Sloppy Joe

I knew the first step in creating healthier sloppy joes was to get rid of the ketchup and brown sugar frequently found in traditional recipes. Ketchup is one of those unique ingredients that brings a deep savoriness and body to whatever it’s added to, which is one reason it’s so popular in ground beef recipes. The challenge is that it’s filled with both high fructose and regular corn syrup.

Using a combination of tomato paste and crushed tomatoes, I was able to create the rich tomatoey sauce that gives the joes the sloppiness that makes them fun to eat. I prefer crushed tomatoes to canned tomato sauce because the crushed tomatoes have more body and flavor and create a richer sauce.

The brown sugar never made sense in a dish that already has so much sweetness from the tomatoes that I dropped it completely and never missed it. 

To make the joes healthier, I add a can of diced tomatoes, improving the balance of meat to veggie while adding texture. The tomatoes are also a cost-effective way of getting more servings from each batch.

Simple Tips for Building Flavor

The best sloppy joes should have a deep, savory flavor that lingers as you eat them. Adding savoriness to a dish, especially if it lingers on your palate, helps make a dish feel comforting.

By itself, tomato paste is a great way to add umami to a dish, but it doesnโ€™t add much complexity. To deepen the flavors, I started by adding Worcestershire and a little liquid smoke. The Worcestershire sauce is essentially umami in a bottle that helps bring out the beefy flavor in ground beef. The liquid smoke provided a subtle smokiness that balances out the tomatoesโ€™ sweetness.

Chili powder, smoked paprika, and a dash of red pepper flakes give the sloppy joes depth and elevate this recipe over the pedestrian ones littering the internet. 

What the joes still needed was a little acid to punch things up. Some apple cider vinegar and mustard added enough acid and complexity to balance the flavors. An aha ha moment was when I replaced the ground mustard powder with some stone ground mustard. Using the stone ground mustard adds another dimension giving the recipe something unique.

When seasoning ground meat dishes, itโ€™s important to use herbs and spices that complement the meatโ€™s natural flavors. Here, the chili powder and smoked paprika add to the beefโ€™s natural savoriness. In our turkey sloppy joes, we use thyme and cumin that play well with the ground turkey. 

Cooking Sloppy Joes

There are a couple of small things you can do during cooking that will improve the joeโ€™s overall flavor. Sautรฉing the onions and garlic before browning the ground beef, versus adding them in after, infuses their flavors into the meat.

Letting the sloppy joes simmer, uncovered, for 15 to 20 minutes after everything has been added improves both texture and flavor by concentrating the sauce. 

While I was testing this recipe, I would take a little taste every five minutes to try to figure out how long it should cook. It was fascinating to see how much the taste and texture would change every five minutes.

The longer it simmered, the more the flavors infused themselves into the meat. At the beginning, the flavor was entirely on the outside, with the center of each chunk tasting bland. After 20 minutes, the sauce had infiltrated itself to the core of each piece, giving them a much deeper flavor.

Many of the recipes I came across during my research included green pepper, which is something Iโ€™d never had in all the time Iโ€™d been eating sloppy joes. It seemed an odd fit, since bell peppers donโ€™t have a lot of flavor and are usually used for texture and color. The consensus from the batch I tried them in was that they added an odd texture and did nothing for taste.

Sloppy Joe Tasting Guide 

Here are some simple ways to adjust the sloppy joes to fit your taste.

  • Too sweet – Add ยฝ to 1 tsp of Worcestershire or mustard
  • Too tangy – Add 1 tsp of tomato paste
  • Want more heat – Add another ยผ  to ยฝ tsp of red pepper flakes
  • Too much liquid – Simmer uncovered for an additional 5 to 10 minutes
  • Too thick – Add a splash of water

Sloppy Joe Sandwiches

The sloppy joes are best served on warm hamburger or onion buns. A simple tip when serving them is to toast the buns before adding the filling. 

Toasting creates a barrier between the sauce and the bun, helping them hold together longer and making the buns taste better. Buttering the buns before toasting helps create a more robust barrier.

Ingredients

  • 1 1/2 lbs ground beef
  • 1 cup white onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste, double concentrate
  • 1 14 oz can crushed tomatoes
  • 1 14 oz can diced tomatoes, drained
  • 1 1/2 tbsp Worcestershire sauce
  • 1/2 tbsp apple cider vinegar
  • 1/2 tbsp stone ground mustard
  • 1/2 tsp liquid smoke
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1/4 tsp red pepper flakes
  • 1 1/2 tsp table salt
  • 1/2 tsp black peppe

Instructions 

  • Sautรฉ the onion and garlic with a little oil in a medium-high pan for a few minutes.

  • Add the ground beef to brown, stirring as it cooks.

  • Once the ground beef has finished browning, pour off any excess liquid and reduce the heat to a low simmer.
  • Add the tomatoes, tomato paste, liquid smoke, Worcestershire sauce, mustard, and apple cider vinegar, giving everything a good stir.
    2 tbsp tomato paste, 1 14 oz can crushed tomatoes, 1 14 oz can diced tomatoes, 1 1/2 tbsp Worcestershire sauce, 1/2 tbsp apple cider vinegar, 1/2 tbsp stone ground mustard, 1/2 tsp liquid smoke
  • Stir in the chili powder, smoked paprika, red pepper flakes, salt, and pepper. Simmer the sloppy joes uncovered for 15 to 20 minutes, stirring occasionally, to let the flavors come together.

  • If stone ground mustard isnโ€™t available, substitute any high quality mustard.
  • A cup of white onion is approximately 1/2 of a large white onion.

What to Serve with Sloppy Joes

Sloppy joes are easy to make and are a perfect dish for a simple dinner, lunch, or as leftovers. Here are a few side dishes that fit with the healthier, better tasting theme.

Tips and Tricks

I generally use lean ground beef (85/15) when Iโ€™m making dishes where the ground beef is browned. It hits that sweet spot of having enough fat to be flavorful and not so much that dishes turn out greasy.

Simmering the sloppy joes uncovered thickens the sauce and deepens the flavors by cooking off extra liquid. If there is more liquid than youโ€™d like at the end of simmering, use a slotted spoon to serve or drain off the liquid.

Sloppy joes can be kept in the fridge in an airtight container for a week to ten days. They can be reheated in the microwave or on the stove. 

This recipe can be doubled or tripled to make enough for a large group or to freeze. The sloppy joes will easily keep in the freezer for six to nine months and should be defrosted in the refrigerator before being reheated.
